Sidenote - When you go to install drill a fine/tiny hole in them to allow water to pass through to prevent air pockets

Basically coolant has to stay a certain time in the radiator to cool properly (aka cannot move too fast). I recommend 160 degree thermostats with a hole drilled in them to prevent air pocketing. Sidenote: so when you have no thermostats the car warms up more slowly, but once over like 180, you overheat more and overheat faster. AKA - why you want thermostats.
Also, a water pump is incredibly powerful as to suction and you want a spring in the lower hose to prevent collapse.

First pull the radiator tubes from the engine to the upper radiator and see if there are screens in the tubes. If so they are probably plugged up.
Second check and make sure the thermostats are not stuck.
Third is check the radiator hose from the bottom of the radiator to the water pump. AS the hose gets old it may be collapsing and restricting the water flow.
Fourth - are you sure the radiator is clean? Several tines I have seen the engine puke and send a bunch of junk into the radiator and plug it up with no warning and happens very quickly.
For items one, two and four you can check these with an infrared thermometer as the engine warms up.
